30 minutes · for the low-fiber days
Ingredients
Per person. The planner scales these for however many you are cooking for.
5½ oz ground turkey
4 oz white pasta
¾ cup tomato puree
½ oz parmesan
Method
Mix the turkey with a pinch of salt and a tablespoon of water, then roll into small balls, handling as little as possible.
Brown them in a skillet over medium heat, about 5 minutes, turning once.
Add the tomato puree, reduce the heat and simmer until the meatballs are cooked through, about 15 minutes.
Meanwhile cook the pasta, then toss with the sauce and finish with the cheese.
Cook this earlier in the week rather than later. Tomato sauce is out once you reach the days with nothing red in them, because the color can be mistaken for blood during the exam.
