Soft Scrambled Eggs on Toast

Slow, soft eggs that fold rather than crumble, on hot buttered toast.

Ingredients

Per person. The planner scales these for however many you are cooking for.

Method

  1. Beat the eggs with a generous pinch of salt until no streaks of white remain.
  2. Melt the butter in a nonstick skillet over low heat, then add the eggs.
  3. Cook, stirring slowly and constantly with a spatula, until they just set into large soft folds and the eggs are still glossy, 3 to 4 minutes.
  4. Remove from the heat while they look slightly underdone. Serve immediately with the toast.
